CHICKEN TIKKA

INGREDIENTS
Chicken tikka pieces      4-6 pcs
Salt                                to taste
Red chilli                        1/2 tbsp
Green chilli crushed        2-3
Ginger garlic paste         1tbsp
Coriander seed              1 tsp
Onion paste                   1 tbsp
Yogurt                           1/2 cup
Lemon juice                   2 tbsp

METHOD
Mix all ingredient in yogurt and marinate chicken in it. Refrigerate it for 3-4 hours. Then coal burn it on grill of
BBQ tray,  grease it with oil or butter while cooking. Serve hot with salad and Nan.

BEANS AND MINCED MEAT

I love this dish. My grandmother cook this, and I had eaten this dish first time at my grandma's  home. I still remember its taste. I hope you will also like it.
INGREDIENTS
mincedmeat   1/2 kg
beans            1/4 kg
onion             2-3 medium size
ginger garlic paste  2tbsp
tomato  3
green chilli  4
coriander seeds crushed   1 tsp
salt to taste
red chilli powder      2tbsp
turmeric powder     1/4 tsp
gram masala    1 tsp

METHOD
Boil beans by adding salt to taste.
Fry onion in hot oil till golden brown, then add minced meat , chilli garlic paste and cook iat for 10 min.
 Add tomatoes chilli powder, turmeric powder and fry the meat till it leaves oil.
Mix boiled beans and on slow flame leave it for 5 min.
In the end garnish with coriander leaves and green chillies.

COLOURFUL VERMICELLI

This is a special sweet dish for eid celebrations.
INGREDIENTS
vermicelli  1 packet
sugar 1/2  cup
food, colors red and green
cardamom 3-4 seeds
dry fruit for garnishing

METHOD
Divide the vermicelli in three parts. boil 1 part by adding green color, other part by adding red color and 3rd one without any color. Make sugar syrup (take 1 cup water, mix sugar in it while heating, add cardamom seeds).  In a pan place the vermicelli in three layers. Add sugar syrup and kept on stove at a very low flame for 5 mins. Then sprinkle dry fruits and serve it.

NAN

INGREDIENTS


flour 500 gm
yogurt 2tbsp
salt 1/2tsp
sugar 2tsp
oil 2tbsp
yeast a2tsp
baking powder 1/2 tsp
water as required milk powder 2tsp

METHOD 
Mix all ingredients and knead with warm water to form soft dough. Cover with damp cloth and leave in a warm place to rise. When the dough doubles in size, punch it down and make ten balls out of it. roll out each ball into eight inch discs, glaze with milk, sprinkle sesame seeds and bake for ten min. in hot oven.

LAHORI FISH


INGREDIENTS
fish          1/2 kg
lemon       1
salt            1 t.s
red chilli     1 t.s
hot spice     1/2 t.s
turmeric      1/4 t.s
ginger garlic paste       1 t.s

METHOD
Wash the fish with rinse water, then sprinkle some wheat flour on it. Rub it and wash it again. Cut it into pieces with sharp knife. Mix the whole spices and  marinate the fish for 4-5 hours. Then shallow fry it in a frying pan. serve it with a nan.

DATE DELIGHT

This is a sweet dish of a summer's  season. in this season fresh dates are available everywhere. so try it.
INGREDIENTS
Date 250 gms
mawa (khoya) 1 cup
condensed milk 1/4 cup
coconut 4 tbs
brown sugar 2 tbsp
vegetable oil (ghee) 1 tbsp
rose water 1 tsp
 rose petals - few
dry fruit (almond, cashew nut, pistachio)  1/4 cup
cardamom 3-4
METHOD
Heat the ghee in a pan and add cardamon seeds. Then add mawa , brown sugar, coconut and dry fruits and mix it. let this mixture to be cool. Make a cut on the date and remove the seeds, then fill it by mixture. After filling , place the date in a serving dish,  pour condensed milk and garnish with silver foil and rose petals.

INGREDIENTS
Boiled chicken    1/2 kg
Boiled potato      2-3
Boiled carrot       2 -3
cabbage             1/2 flower
green chilli         2
soya sauce        1t. spoon
salt                    1tbl  spoon
black pepper      1/2 t.spoon
vinegar or lemon juice     1 t.spoon

METHOD
Mash chicken , potato, and carrot. after cutting cabbage , mix all the ingredients and make kabab. Dip in egg and then shallow fry it. serve with nan.

CHICKEN SALAD

This chicken salad is perfect for lunch or a light dinner.

INGREDIENTS
boneless chicken breast  4
mixed salad greens   1/2 lb
sliced fresh basil leaves  1/4 cup
fresh oregano leaves  2tbsp
blue cheese  2 oz
fresh lemon juice 2tbsp
salt and cracked black pepper to taste
olive oil  1tbsp

METHOD
Season the chicken breast with a little salt and pepper. It can be cooked in a broiler for 10 min., or in a hot pan    by adding 2tbsp olive oil. When chicken is just about done, remove skin and top breasts with a little Gorgonzola cheese and put it back in the broiler to melt. Toss greens with lemon juice, olive oil, salt and pepper. Distribute greens onto 4 plates. Place chicken breasts on top of greens. Serve.

DIET MANGO SHAKE

Diet shakes can be made at home, for those who are weight conscious. Diet mango shake is a quick and an easy way to enjoy the taste of mangoes in summer without increasing  weight.

INGREDIENTS
2 ripe peeled mangoes
pitted dates
a cup of orange juice

METHOD
Put the dates and mangoes into a blender, pour the orange juice on them and blend them into a smooth liquid. Pour into glasses and serve.

CHICKEN FAJITA

This dish is written in my diary. I have tried it, it is very delicious.


INGREDIENTS
boneless chicken breast halves  3 Pcs (cut in thin strips)
onion  1medium (cut in wedges)
garlic 2cloves
green or red chili peppers  4 (seeded and sliced)
1 sweet red bell pepper  (seeded and cut in strips)
1 green bell pepper  (seeded and cut in strips)
1 zucchini, trimmed, cut in strips
8 flour tortilla, warmed
sour cream 1/2 cup
1 bunch green onion, trimmed and sliced


METHOD
Heat the oil in a heavy skillet; cook the chicken strips over high heat stirring constantly for five min. or until cooked. Drain and set aside. Add the onion, garlic and chili peppers to the oil in the pan and saute over high heat for two min. Add the bell peppers and zucchini; cook over high heat for four min. or until the vegetables have begun to have a blackened look around the edges. Return the chicken to the pan and heat until sizzling hot. Serve with warm tortillas, sour cream, slice green onions and chopped tomatoes and hot cooked rice.

MINT AND POTATO SALAD

INGREDIENTS
potatoes 2 large, boiled and diced
mint leaves 2tbsp chopped
Thai chili paste  1tbsp
brown sugar or honey 1tbsp
lemon juice 2tsp

METHOD
Mix chili paste, lemon juice, and honey in bowl. Toss potatoes in it garnish with chopped mint and serve as a side dish with Thai chops 

THAI DISH

GRILLED THAI CHICKEN CHOPS
This is a Thai dish, and easy to cook and digest. because oil is not used.


INGREDIENTS
chicken chops 6 PCs
MARINADE
Thai chili paste 2tbsp
garlic paste 2tsp
soy sauce 2tsp
lemon juice 2tsp
oyster sauce 2tbsp
fish sauce 2tsp

METHOD
Flatten each chop with kitchen hammer. Mix all marinade ingredients and leave to marinade for at least two hours. Grease a grill pan and cook till char grill marks appear.


CHICKEN IN TOMATO PUREE

INGREDIENTS

chicken boneless thigh PCs  250gm
ginger 2tbsp
green chili  2
cream  2tbsp
oil 1/2 cup
water  1/2 cup
red chili powder 1tsp
turmeric powder  1/2 tsp
salt  3/4 tsp
coriander powder  1tsp
HOT SPICES
cumin 1tsp, black pepper corns 1tsp, cardamom seeds  1/4 tsp(grind all ingredients)
PUREE
tomatoes 4 medium
onion  1 medium
garlic cloves 4
water 1 cup
(boil all the above for 15 min. then blend and sieve to form a smooth paste)

METHOD
Heat oil in a vessel. Put chicken pieces and fry it till they change color.Add in puree and all dry spices except hot spices and cook it till oil separates. Add hot spices and cream and cook for a while. Lastly, add green chili and ginger julienne. Serve with a dollop of cream on top.

CHICKEN SALAD ROLL

This roll recipe is also for kids.

INGREDIENTS

Boiled chicken (cubed pieces) 3 cup
pineapple (cubed pieces) 1 cup
green capsicum(cubed pieces) 1/2 cup
mayonnaise 1/2 cup
salt and black pepper to taste
honey 1tsp
bread roll 6 pieces

METHOD

Mix all the ingredients and fill up in bread roll and make a roll.




SALAD FOR KIDS

This salad dish is for school going kids for their lunch time. Very simple recipe. It is delicious and healthy food for kids. I hope they will enjoy it.

INGREDIENTS
boiled chicken (cubed pieces) 1 cup
apple (cubed pieces) 1/2 cup
cucumber (cubed pieces) 1/2 cup
tomato ketchup 1-2 tbs
mayonnaise 2-3 tbs

METHOD
In a bowl add chicken and apple, then add ketchup and mayonnaise. Mix well and then add cucumber. Mix again and pour in lunch box.

CRISPY POTATOES

INGREDIENTS
Potatoes 2-3
corn flour 3 tbsp
chili sauce 1 tbsp
tomato sauce 4 tbsp
soy sauce 2 tsp
honey 1 tsp
salt to taste
caraway seeds (a pinch)
oil to deep fry

METHOD
Wash potatoes (peeled & cut as finger chips)
After drying, mix well with corn flour.
Deep fry the potatoes
In a pan ,add 1 tsp oil, after a while, add caraway seeds.
after 1 min., add potatoes, chili sauce, tomato sauce, honey, salt and soy sauce.
Mix & stir fry for 2 min.

CHICKEN & NOODLES

INGREDIENTS
Fresh egg noodles
1 boneless chicken breast
3tbsp vegetable oil
1 each red, green, & yellow pepper (seeded & sliced)
1 tsp peeled & grated fresh ginger
1/2 cup chicken broth
2 tbsp ketchup
2 tbsp soy sauce
1 tsp corn starch
2 tbsp sesame seeds

METHOD
Cook noodles in boiling water for 2 min., drain and rinse under cold running water.
Add chicken in hot oil &stir fry for 3 min.
Add pepper, ginger & stir fry for 3 min.
In a bowl mix chicken stock, ketchup, soy sauce and corn starch. Pour in chicken.
Add noodles and mix well for 2-3 min.
Dish out, sprinkle sesame seeds & serve.



SWEET & SOUR CHICKEN

INGREDIENTS
Boneless chicken breast 1pcs
pineapple 1 can
tomato paste 4-6 tbsp
1 diced small green pepper
1 diced small red pepper
oil 2tbsp
soy sauce 2tsp
salt & black pepper to taste

METHOD
Cube chicken & fry in oil for 5- 10 min.
To chicken add pineapple, pepper, tomato paste, salt and soy sauce.
Cook for 10 min.
Sweet chicken is ready to serve.

APPLE SPONGE

INGREDIENTS
Apples 500gm
eggs 2-3
white flour 1/2 cup
corn flour 1/2 cup
sugar 1/3 cup
lemon juice 3tbsp
baking powder 1/2 tsp

METHOD
Wash & cut the apples in thin slices.
Cook the apples by adding lemon juice and sugar.
Beat the eggs and then add sugar, white flour, corn flour, baking powder.
Dish out the apples and pour this mixture.
Sprinkle sugar and cinnamon powder.
Bake at 180 C for 20 minutes.
